Powdered millet is mixed with water to form a slurry base while beef/meat is sautéed or deep fried. The millet slurry is added to the fried beef and boiled to get the desired consistency. “Chopped mint leaves and salt are added and brought to a boil. Since the millets are organically grown, and the dish entails less oil and spices, it is healthy and packed with antioxidants,” says Chewan K Dahal, a Gangtok-based media trainer (with a nose for good food).
